Canadian Cocktail Hour: Pineapple Margaritas or the Pinarita

Snuggled in our Canadian hideaway, I knew that we would have many cocktail hours on the dock to look forward to. I brought along Ben Reed’s book Margaritas and other Tequila Cocktails.  It was basically my desert island book–one woman, alone in the wilderness with one mixology book and many thirsty guests.

One of the summer favorites from Reed’s book, though not a technical margarita, was the Pinarita.

Pinarita

  • 2 oz. gold tequila
  • scant oz. triple sec
  • scant oz. fresh lime juice
  • 1 oz. pineapple juice
  • thin slices of fresh pineapple, to garnish
Add all the ingredients to a blender.  Add two scoops of crushed ice and blend for 20 seconds.  Pour into a margarita coupette, garnish with a pineapple slice, and serve with two straws.

We used the Margaritaville DM1000 Margaritarator for adding ice to our drink.  First, we mixed all of the ingredients in a pitcher, poured it into the Margaritaville pitcher up to the 12-14 oz. line and pressed the button.  Simple and delicious.

I’d also like to add that we used canned juice, Jose Cuervo Gold (all there is in Canada at the local LCBO store housed in a trailer) and lime concentrate.  It was tasty–imagine if you had the fresh ingredients?
